  • 1 tbsp green pesto
  • 1 red pepper
  •  1/2 red onion
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 2-3 eggs

Preparation:

  1. Finely chop the bell pepper and onion, then mix both with balsamic vinegar and olive oil.
  2. Whisk the eggs in a glass, season with salt and pepper and add the pesto. Put the egg pesto mixture in a hot, non-stick pan and stir-fry for 2 to 3 minutes. You don’t need any extra butter to fry because the pesto contains oil.
